When the weather gets cold – see your breath cold – hearty food season officially begins. The days are definitely colder rather than warmer lately, so I’ve really been craving comforting, homey dinners. It’s been awhile since I’ve made Bolognese sauce, so I decided to go that route and made an incredible three cheese lasagna.
Bolognese is a very rich, meaty sauce. The pancetta and vegetables bring a unique taste, while the beef stock, wine and milk bring additional levels of flavor. It is absolutely delicious.
I usually pair Bolognese with fresh pappardelle or rigatoni. This time, I wanted something even heartier. Three cheese lasagna was it! The sauce soaks into the noodles while also blending well with the three cheese filling. It’s one of the best lasagnas I’ve ever made or eaten. Seriously.
This lasagna is the perfect combination of ingredients. The richness of the sauce cuts down on the richness of the cheese while the pasta helps balance everything. It’s simple but complex… Recipes like this one always end up being the most tasty and become fast favorites!

Three Cheese Lasagna with Bolognese Sauce
1 recipe Bolognese sauce
1 box dried lasagna noodles
2 15 oz containers ricotta cheese
1 1/2 cups mozzarella, shredded
1 cup Parmesan + more for top, freshly grated
pinch red pepper flakes
salt + pepper
Make the Bolognese sauce ahead of time and cool completely. I often make it the day before.
Bring a large pot of water to a boil. Cook the lasagna noodles for half the recommended cooking time. The noodles will continue to cook when baking. Under-cooking the first time will ensure you have al dente noodles when the lasagna is completely finished.
Bring the ricotta cheese to room temperature. Mix with mozzarella, Parmesan, red pepper flakes, salt and pepper. Set aside.
Preheat oven to 400 F.
Spoon some Bolognese sauce across the bottom of a glass baking dish. Line a row of lasagna noodles across the bottom, overlapping as you go. Cover with a layer of the cheese mixture then a layer of Bolognese sauce. Top with another layer of noodles and repeat with cheese and sauce layers. Do this a third time and top with 1 last layer of lasagna noodles. Cover with 1 final layer of Bolognese sauce and a dusting of fresh Parmesan.
Line a baking sheet with foil. Cover lasagna with foil and bake for 30 minutes. Uncover and bake 35-45 minutes or until bubbling.
Remove from oven and let cool for 10-15 minutes. Cut and serve with salad or bread.
