Tacos are one of those foods that everyone seems to be infatuated with. They are so versatile, it’s hard not to find some variation you like. Fish, beef, pork, shrimp, chicken, veggie… There is literally something for everybody.
Personally, I like every kind of taco. There are so many different flavor profiles, I could eat them every single night and always feel like I’m having something new and different. There are a myriad of toppings and sauces available in addition to different ways of preparation. Tacos are a fun food to play around with. Plus, they’re all completely delectable, which just increases the urge to consume them on a daily basis. I honestly can’t get enough of them. Ever.
During hot summer days, I like pulling out my slow-cooker to make these pork tacos. The kitchen stays cool, the prep work is minimal and I get a delicious, full flavored dinner. The seasoning mix I use enhances the pork, but doesn’t overpower it. The sautéed peppers, onions and garlic add a nice fajita-veggie kick and the crunchy radish slices bring some fresh tasting texture. I like serving them with salsa and hot sauce on the side, drizzling a little on top for a spicy punch. A squeeze of fresh lime juice makes everything pop… The acidity really brightens up these tacos.
